I liked the simplicity of this recipe. It was very easy to put together and would make a terrific appetizer. I used portabella mushrooms and for the cheese, I chose feta. I baked these at 375F and they were nicely done after 15 minutes. Made for Please Review My Recipe tag. Thanks! :)

YUMMY! Very easy to make and wonderfully versatile. I made these for lunch with three friends and doubled the recipe and, even though these mushrooms were served with several other dishes, they were all eaten with great gusto and demands for the recipe! A resounding success by any standards! I added to the leeks, half an onion minced, 4 cloves of minced garlic, some fresh thyme and - as Noo had suggested - a couple of rashers of chopped bacon. I used half and half mozzarella and cheddar - my guests probably would have liked blue cheese but I don't. The walnuts were a great addition. All in all a wonderful blend of flavours and certainly a recipe I shall be making again. Thank you for sharing another super recipe Noo!

This was a really simple but tasty appetizer/side dish. I used a nice Stilton and the flavors all complimented each other very well. I served these with Steak Tips Au Poivre (the sauce was fantastic on the mushrooms!) but would advise against using white "stuffing" mushrooms - they gave off a lot of liquid when cooking and just didn't hold much filling. Next time I'll try portobellos. For those who aren't sure, Gas Mark 6 is equal to 400F. Thanks for posting!
