Red, White and Blue Salad

"Happy Independence Day Everyone!!! This is not too time consuming, but worth every minute spent. A great jello salad for celebrating July 4th. Make sure to read the directions carefully and dont start the next layer until the previous one is solid."

  • First layer: Dissolve 1 pkg Raspberry jello in 2 cups hot water.
  • Pour into clear 13x9in baking dish.
  • Chill until completely set.
  • Second layer: Soften Plain gelatin in cold water.
  • Heat the coffee cream and sugar over low heat.
  • Remove from heat and stir in the plain gelatin mixture.
  • Add vanilla, softened cream cheese and chopped nuts.
  • Put on top of SOLID 1st layer.
  • Chill until completely set.
  • 3rd layer: Combine 1 pkg Raspberry jello with 1 cup hot water until dissolved.
  • Add blueberries, juice and all.
  • Put on top of SOLID 2nd layer.
  • Chill until completely firm.
  • Enjoy!

  1. Sorry, but I made this for the 4th and the famliy just didn't like the filling. I was surprised because we all love nuts but it just tasted strange.
     
  2. I remember tasting this recipe at a church picnic in 1976! I believe it originated in the Woman's Day magazine. I remember how much I loved it, but never had it since. I'm so happy to finally have found it! Thank you, Laurie!
     
  3. Absolutely delicious--we will be having this often. No need to wait till 4th of July. I did try some subsitutions in this recipe and some worked and others didn't. I used strawberry jello instead of the stated flavor and skipped the nuts. Instead of a can of blueberries I used a package of fresh blueberries and cooked them for a few minutes with 1/3 cup sugar and some water. The subsitution that didn't work for me was in the second layer I tried using 1% milk instead of cream--it just didn't work well and didn't get firm--so then I made another mistake instead of waiting went ahead with the third layer. The result--delicious but the second layer didn't become firm--however this also got a round of applause from the family and will be making it again--next time following the directions.

I know that in the years since Ive been a permanent fixture of this site I have acquired many great recipes and tons of cooks that I am proud to call my friends!
