  • Pour all ingredients except pineapple juice into a cocktail shaker, and mix well.
  • Pour into a cocktail glass filled with ice and add pineapple juice to taste.
  • Mix well.

  2. I love this cocktail! The apple Schnapps was a new flavor for me, as I usually only have peach or peppermint on hand, so I was really surprised at how much I liked the apple. Pineapple juice in anything is good & this drink is no different. I've made it twice actually. The first time I made it exactly as stated and it was a beautiful blue until I added enough pineapple juice to fill the rocks glass; then it turned green. Well, I couldn't post a photo of a green cocktail to a recipe called Blue Light Special! :) So, the next afternoon I made it again, upping the Schnapps to about 1-1/2 oz, 1/2 oz each of the vodka & curacao and then just topping off with the pineapple juice to fill a martini glass. The bonus is that I got to enjoy this drink all over again! Thanks for posting, Bren!Made & enjoyed for Spain & Portugal Forum's Cooking with Apples event. :)

  4. Well it's 105 degrees here and we are absolutely burning up. What a refreshing and satisfying drink. Very attractive also. The measurements were so small that I increased them in proportion using 3 ounces apple schnapps to 1 ounce each vodka and blue curacao. Excellent. Will surely make again. Thanks NM for the great cocktail.
